Fig, Vanilla Bean + Vantage Cocktail
Yields 1 cocktail
To make the Cocktail
15ml Fig + Vanilla Bean Simple Syrup (recipe below)
2 dashes orange bitters
tonic to fill your glass (approx 100ml)
Fill a cocktail shaker with ice. Add the gin, syrup and bitters. Stir well. Strain into a glass with an ice cube and top with tonic to taste. Garnish with a fresh fig slice. Enjoy
Fig + Vanilla Bean Simple Syrup
6 fresh figs, stems removed and halved
1/2 cup sugar
1/2 cup water
1 teaspoon vanilla bean paste (or scrape the seeds from 1 vanilla bean)
Add all the ingredients to a small saucepan, and bring to a boil over medium-high heat. Reduce heat to medium-low. Cook, stirring frequently, for about 5-7 minutes or until figs break down. Allow to cool, and strain using a fine mesh strainer.
Store in a tightly sealed container in the refrigerator for up to one week. Yields about 150ml of syrup (enough for 10 cocktails).
