We can’t help but get in the mood for all things love and pink cocktails. Here’s a beauty to celebrate Valentine’s Day with your special someone.
(A fig and rosewater fizz)
30ml Fig syrup
Raspberries, figs and/or edible rose petals to garnish
Homemade fig syrup
1 cup water
1 cup sugar
2-3 medium/large figs chopped
1 tsp rosewater
First make the fig and rosewater syrup by dissolving the sugar in the water using a small pot, when it’s bubbling add the fig pieces and let simmer until sugar is dissolved and the syrup turns a beautiful pink hue. Set aside and once cooled strain it and add 1 tsp rosewater. Store in the fridge until use.
Fill a cocktail shaker with ice, add Vantage and syrup and shake for 30 seconds.
Strain over ice in your preferred cocktail glass, top up with soda water and garnish and sip while lovingly gazing into your partner’s eyes… ahhh….
